At this point, I'll do almost anything to get Conall to eat, and especially to eat something healthy, so I checked the book out from the library. The pictures of the food looked really good, so I thought I'd give a few of the recipes a try. I was hoping that Conall would eat them, but I wasn't going to hold my breath.
Last night I made Blueberry Oatmeal Bars for Conall to eat for breakfast. They have lots of things in them that he likes, including oatmeal, sugar, cinnamon and blueberry preserves. They also have spinach puree in them.
I steamed and pureed the spinach. I pureed it 3 times the amount of time the recipe called for, hoping to get rid of any texture. I packaged and froze the extra spinach and mixed and baked the bars. The whole time I was thinking how much effort this was for something that only Stu and I would end up eating.
It was a hit! He ate all but one bite of his breakfast bar before he went to school this morning. That is an overwhelming success for Conall. Now, the true test will be if he'll ever eat it again. But, I managed to get him to eat one.
